World Dock Catfish Rollatini
Directions
- Preheat oven to 350°F.
- Combine the bread crumbs, Parmesan cheese and chives.
- Season Catfish fillets with salt and pepper and heavily coat each fillet with bread crumb mixture.
- Roll each fillet from the large end, wrap each with a bacon strip and secure with wooden skewers.
- Heat oil in a pan. Cook catfish rolls until bacon is browned, turning frequently.
- Place fish in a lightly greased baking dish. Bake, uncovered, for 8-10 minutes until cooked through.
- Serve on a bed of rice.

- 1/4 cup bread crumbs, dry
- 1/4 cup Roma® Cheese Grated, Parmesan
- 1 tbsp Peak Fresh Produce® Chives, Fresh
- 2 cups rice, white
- 4 Ridgecrest® Bacon, Applewood Slice(s)
- salt and pepper
- 4-8 skewers, small wooden
- 4 World Dock® Catfish, FIllet(s), thawed and patted dry
