Calf's Liver with Onions

Directions

  1. In a sauté pan over medium heat add half of butter. Add onions, salt and pepper. Cook for 4-5 minutes.
  2. Add white wine and reduce by 3/4 . Hold onions warm.
  3. In a separate pan add remaining butter over medium heat.
  4. Dredge calves liver in all purpose flour then place in pan and cook for 2-3 minutes per side.
  5. Plate and top with onions then serve.

  • 3 oz. clarified butter
  • 1/2 Cup(s) flour, all-purpose
  • 1 Tbsp. parsley, minced
